Yes, that’s a fair point. Melting permafrost, for example, can release pent-up greenhouse gases and then not refreeze, creating irreversible feedback loops. But when, exactly, that happens cannot be predicted with precision. There’s no precise amount of warming, whether 1.5 degrees, 2 degrees, or some other set number, after which the world ends. “We have 12 years to stop climate change” is simply inaccurate, both because climate change has already started and because after year 12 we can still mitigate it or make it worse.

The accurate way to talk about it as you did: “The higher we allow the temperature to rise, the greater chance…”
